This is made in two parts that are blended together - the older vineyard adds intense complexity and spends 9 months in 600L used French oak barrels before being blended with the juice from the smaller vineyard, of which 30% is whole cluster fermented, to add freshness and lightness. Minimal sulphur added with just light filtering, certified with integrity and sustainability, and made without using harmful chemicals. Small batch production, spontaneously fermented with native yeasts, grapes are handpicked.
