Grapes are hand-harvested and fermentation, using only ambient yeast taken from the vineyard and winery, takes place at a very low temperature and therefore lasts several months. The character of this wine is therefore deeper and far more complex than most Macon, more akin to the fresh, powerful and mineral wine style of the Côte D’Or.\n\nOn tasting you get a rounded, flowing, creamy palate, balanced by a crunchy mineral bite and a long juicy finish. Aromas and flavours of mandarin, lemon and lime with a lovely slick of limestone contribute to the quite serious quality here.
